FSANZ seeks comments on approval of mushroom mycelium as a processing aid in the fermentation of pea and rice protein

On December 2, 2024, the Food Standards Australia New Zealand (FSANZ) issued Notice 320-24, Application No. A1279, seeking comments on the approval of mushroom mycelium as a processing aid in the fermentation of pea and rice protein.

  

According to the notice, the application, filed by MycoTechnology Inc. permits the use of shiitake mushroom mycelium as a processing aid in the fermentation of pea and rice proteins for the production of protein components added to various food products. The deadline for comments is January 28, 2025 at 6 p.m. (Canberra time).
