The Philippines to formulate processing standards and operational codes for distillation and fermentation of coconut water

On November 23, 2023, the Philippine Food and Drug Administration issued a consultation document to develop standards and practices for the processing of distilled fermented coconut water, with a feedback period ending December 7, 2023. Main contents:

 

(1) Scope and definition;

 

(2) General guidelines. The raw material is fermented and distilled coconut water, which can be added to the fruit block or fruit peel extract, drinking water, food additives, such as colorants and spices; General process: acceptance of coconut water, filtration, natural fermentation at room temperature, distillation, packaging, etc.

 

(3) Label. The label should indicate the percentage of alcohol content, all ingredients used in the product (including food additives) are declared on the label, the ingredient list is arranged in descending order, batches, etc.;

 

(4) Sampling and analysis methods.
