Peru to set hygienic standards for dairy production

On July 19, 2022, the Ministry of Health of Peru issued Resolution 523-2022 to establish hygienic standards for dairy production, with a 15-day feedback period. The main contents are as follows:
(1) Definition. 35 definitions of related terms, such as high-risk food, industrial processed food, yogurt and health supervision, etc;

(2) General provisions. Companies producing high-risk dairy products must comply with procedures such as good manufacturing practices (BPM, Buenas Prácticas de Manufactura), Programme for Hygiene and Sanitary (PHS, Programas de Higiene y Saneamiento) and sanitary control of raw materials (CCS, Control de la Calidad Sanitaria de la Materia Prima); Specific regulations on plant location, plant infrastructure, water supply, wastewater discharge, workers' changing room requirements, lighting, ventilation, production equipment, workers' sanitary operation requirements, pest control, toxic compound management, product traceability and recall;

(3) Control of raw materials. The raw materials of dairy products must come from the production enterprises with the relevant certificates issued by the competent authorities for the absence of bovine tuberculosis and brucellosis; Goat raw materials must undergo negative diagnostic tests for brucellosis; If the milk comes from a collection center, it must have a hygiene permit issued by the competent authority; Density, alcohol test and reductase test must be carried out upon acceptance of milk raw material;
(4) Processing requirements. Heat treatment of milk for making fresh and semi-ripe cheese: Hold at 65°C - 67°C for 15 to 30 minutes for pasteurization; To make yogurt, heat milk to 82°C -85°C for 15 minutes;

(5) Transportation requirements for finished products. Vehicles used to transport finished products should not be used to transport raw materials, chemicals, fuels, animals or other items with a risk of cross-contamination and should be maintained in good hygiene state;

(6) Specific requirements for enterprise certification and official supervision and control.
