On December 17, 2024, Japan's Ministry of Agriculture, Forestry and Fisheries (MAFF) issued a notice seeking comments until January 5, 2025 on revisions to the Japanese Agricultural and Forestry Standard for Miso. The main revisions are:
(1) Addition of new requirements for raw materials, requiring that only grains, salt, white sand, flavor ingredients, and miso be allowed to be used as raw materials;
(2) Deletion of the requirements for the management of flavor additives in the mother of the seed liquor and in the production process.
