United States Revises the List of Substances Permitted for Use in the Production of Meat, Poultry, and Egg Products
On 27 January 2026, the Food Safety and Inspection Service (FSIS) of the United States Department of Agriculture (USDA) issued Directive 7120.1, revising the list of substances permitted for use in the production of meat, poultry, and egg products. The directive entered into force on the date of issuance. The main update adds 21 substances, including nitrites and ascorbic acid, to the permitted list for use in the production of meat, poultry, and egg products.
