Brazil issues technical regulations on characteristics and quality of ham

On 22 November 2022, the Brazilian Government Gazette issued Decree SDA701, Technical Regulations for the Characteristics and Quality of Ham. The main contents of the regulations are as follows:


(1) Product definition and classification;

(2) Necessary raw and auxiliary materials (pig forelimb or hind limb meat, nitrite, salt);

(3) Allowed raw and auxiliary materials (water, flavorings and spices, sugars, proteins from animals and plants, etc., the amount of starch added not more than 2%, the amount of non-meat exogenous proteins added not more than 2.5%);

(4) Sensory and physical/chemical properties (fat content not more than 12%, protein content not less than 13%, carbohydrate content not more than 5%, water content not more than 75%, etc.)

(5) Labeling, packaging, storage and transportation regulations.

 

The regulation will take effect from the date of promulgation.
