US formulated microbial sampling requirements for egg substitutes and freeze-dried egg products

On September 29, 2023, the U.S. Food Safety and Inspection Service (FSIS) issued Notice 51-23 establishing microbiological sampling requirements for egg substitutes and freeze-dried and lumped egg products, effective November 1, 2023. The main contents are as follows:

 

(1) In accordance with the Egg Products Inspection Regulations, effective October 30, 2023, FSIS has jurisdiction over egg substitutes and freeze-dried and lumped egg products and is responsible for sampling them for testing for Salmonella and Listeria monocytogenes;

 

(2) Sampling requirements. The processing plant requirements of the above products are consistent with the requirements of liquid eggs, frozen and dried egg products, and it is necessary to strengthen the control of egg product batches represented by qualified samples for microbial testing; If the egg products factory produces multiple products, the inspector will randomly select egg products for sampling, and then rotate the sampling of egg substitutes, freeze-dried egg products, and lumped egg products, each sampling task should follow the principle that all products should be sampled over time.
