US planed to update Sanitation SOPs and HACCP programs requirements

According to the US Federal Register on February 27, 2023, the Food Safety Inspection Service (FSIS) of the U.S. Department of Agriculture (USDA) issued “Announcement No. 2023-04084”, intending to update the relevant Sanitation Standard Operating Procedures (Sanitation SOPs), and pathogen testing and Hazard Analysis and Critical Control Point (HACCP) Systems requirements to ensure that meat and poultry products are safe and healthy, and correctly labeled and packaged. Specific requirements are as follows:


(1) develop, implement, and revise, as needed, written Sanitation SOPs (9 CFR part 416);


(2) conduct regular microbial testing to verify the adequacy of process controls for the prevention and removal of fecal contamination and associated bacteria (9 CFR 9 CFR 310.18, 310.25(a), or 381.65 (f) and (g)); and


(3) develop and implement a system of preventive controls designed to improve the safety of their products, known as HACCP, and maintain necessary records to support the system (9 CFR part 417).


The approval for this information collection will expire on June 30, 2023.
