US released guidance for industry on food hazard analysis and risk prevention controls

On 30 January 2024, the U.S. Food and Drug Administration (FDA) issued Guidance for Industry: Food Hazard Analysis and Risk Prevention and Controls, which states that risk prevention and control measures can help stakeholders apply a proactive, systematic approach to their food safety efforts, and implement preventive controls to protect food, consumers, and the public from biological, chemical (including radiological treatments), and physical hazards.

 

The implementation of risk-based preventive controls does not result in "zero risk" in the production, processing, packaging and preservation of food; rather, risk-based preventive controls minimise the risk of known or reasonably foreseeable food safety hazards that, if present in food, could cause illness or injury to humans. The Guide helps to comply with the requirements for food hazard analysis and risk prevention and control measures, covering written food safety plans, hazard analysis, preventive controls, surveillance, corrective measures, validation, and related records. The Guide contains principles and recommendations to assist in the production, processing, packaging and preservation of food.
