On October 17, 2024, the Moroccan National Office for Food Safety issued Decree 2-24-394 establishing the regulations on food sauces, which came into force after publication in the Official Gazette. The main contents include:
(1) Sauce means a liquid or semi-liquid preparation intended to improve the appearance, enhance the aroma or flavour or improve the texture of a food product, which may be emulsified or non-emulsified;
(2) The product name should use the name prescribed by the standard or regulations, or conform to the corresponding characteristics, and accurately mark the label to avoid misleading consumers;
(3) Enterprises producing, processing, packaging, distributing, transporting and storing sauces must be approved or authorized in accordance with the legislation in force, must ensure the traceability of their products, and importers of sauces must ensure that the products they import comply with the requirements set out in this Order;
(4) The water used for the production of sauces shall be potable water with levels of microorganisms, drug residues and contaminants in accordance with the current regulations, only food additives authorized by the current regulations shall be used, and must be packaged in appropriate, sealed, clean and dry containers to maintain their quality and ensure their health and safety.
