South Korea revised quality standard of traditional aquatic food

On December 27, 2023, the South Korea's Ministry of Oceans and Fisheries (MOF) issued Notice No. 2023-42, revising the Quality Standard for Traditional Aquatic Foods. The main contents of the revision are:

 

(1) The oyster content in oyster hot sauce is revised from no more than 50% to more than 50%;

 

(2) The maximum moisture content of dried nori was revised from 16% to 13% and that of pickled yellow croaker from 70% to 65%;

 

(3) The peroxide value limit of seasoned nori was revised from 60meq/kg to 40meq/kg;

 

(4) Revision of some aquatic food related terms. The announcement shall take effect as of the date of promulgation.
