I. Definitions

According to the Chinese regulations, there are four types of chocolate products, Chocolate, Chocolate product, Cocoa butter alternatives chocolate, Cocoa butter alternatives chocolate product.

1. Chocolate refers to the food kept in a solid or semisolid state at room temperature, which is prepared by using cocoa products and (or) white granulated sugar as the main raw materials with addition or without addition of dairy products and food additives through particular process. Common products include dark chocolate, milk chocolate, white chocolate, etc.

2. Chocolate product refers to the food kept in a solid or semisolid state at room temperature, which is prepared by mixing chocolates and other foods in a certain ratio through particular process. based on the different product ingredients, it can be divided into mixed chocolate products (Hazelnut Chocolate, Almond chocolate), coated chocolate products (Wafer chocolate, candied fruit chocolate), sugar-coated chocolate products (Chocolate beans), etc.

3. Cocoa butter alternatives chocolate refers to the food with chocolate flavor and characteristics kept in a solid or semisolid state at room temperature, which is prepared by using white granulated sugar and cocoa butter alternatives, etc. as the main raw materials, with or without addition of cocoa products, dairy products, and food additives through particular process. Common products include dark chocolate with cocoa butter alternatives, milk chocolate with cocoa butter alternatives, white/flavored chocolate with cocoa butter alternatives, etc.

4. Cocoa butter alternatives chocolate product refers to the food kept in a solid or semisolid state at room temperature, which is prepared by mixing cocoa butter alternatives chocolate and other foods in a certain ratio through particular process. based on the different product ingredients, it can be divided into mixed chocolate products (Hazelnut chocolate with cocoa butter alternatives, Almond chocolate with cocoa butter alternatives), coated chocolate products (Wafer chocolate with cocoa butter alternatives, candied fruit chocolate with cocoa butter alternatives), sugar-coated chocolate products(Bhocolate beans with cocoa butter alternatives), etc.

II. Classification principles

The products with the additive amount of cocoa butter alternatives more than 5% (calculated as raw ingredients) shall be named as cocoa butter alternatives chocolate. The products with the content of chocolate ingredients less than 25% shall not be named as chocolate products.

III. Others

You may have questions after understanding the classification principles of chocolate products, such as hazelnut chocolate, chocolate beans, wafer chocolate, etc. The attribute of the product is chocolate products, but the name is "*** chocolate". In fact, the naming of these products is based on the relevant provisions of food names in GB 7718: the names of foods can be names that have been specified in national standards, or industry standards, or local standards, or equivalent names. GB/T 19343-2016 specifies that chocolate products include hazelnut chocolate, chocolate beans, wafer chocolate, etc. These customary names are also widely accepted by consumers.
