On June 29, 2022, Argentina's National Administration of Medicines, Food and Technologies (ANMAT) issued a consultation document to revise the regulations on processing agents allowed in food, and the feedback period is up to July 29, 2022. Major amendments include:
(1) To add aminopeptidase and carboxypeptidase D from Aspergillus oryzae to the list of enzymes permitted for use as processing agent in food and beverages;
(2) Authorization of the use of the relevant processing agent enzyme must be made upon demonstration to the competent health authority that its use is technically sound and that it does not produce or produce substances harmful to health;
(3) Toxicity tests must be carried out on the enzymes, the concentration of use and the processing conditions of the food to be used to prove that no substances harmful to health are provided.
