On August 16, 2022, the Ministry of Production of Peru issued the NTP211.011:2021 Rum Technical Standard requirements. Implemented on the date of release. Main contents as follows:
(1) Technical characteristics. Production and/or packaging factories of rum must apply fermentation, distillation and aging processes and comply with good manufacturing practices;
(2) The sensory requirements of rum: its appearance should be bright liquid, transparent, free of suspended particles or sediments; With rum aroma, flavor and color characteristics should be free of strange smells and flavors. The aging process can only be carried out in oak containers. Artificial flavoring substances and synthetic dyes are not allowed. The maximum amount of caramel color added is 2.5%.
(3) Sampling and analysis methods , labeling and packaging requirements were settled.
